A nutrition expert since 2011. I earned my degree from the University of Guadalajara in 2011 and later moved to the USA. In 2015, I returned to college, completing my degree at South Dakota State University in 2018. Following that, I finished my dietetic internship in 2019 at the University of Iowa Hospital and clinics, a pivotal step in shaping me into the Dietitian I am today. I successfully passed my RD board exam, officially becoming a registered dietitian in October 2019.
My professional journey began as a PRN dietitian at the Cancer Institute with Avera McKennan in Sioux Falls. Shortly after, I accepted my first full-time position as an outpatient dietitian at Avera Medical Group in Worthington, Minnesota. This role allowed me to work with diverse cases such as weight management, diabetes, gestational diabetes, IBS syndrome, and engage in local ratio with recipes and informative topics related to food and nutrition.
In late 2020, I embraced the opportunity to become the food service director for Bethany Lutheran Home in Sioux Falls. This role involved creating menus, supervising cooks and dietary aids, interacting with residents, addressing concerns, offering nutrition recommendations, educating staff, and managing inventory for the dietary department.
Since 2021, I've been serving as a clinical dietitian at Encompass Health Rehab hospital in Sioux Falls. In this capacity, I conduct nutrition assessments, provide recommendations to patients, issue orders for tube feedings, and educate patients, families, and staff. Additionally, I've been involved in long-term care, providing nutritional consultation to residents through the company Nutrition Consultants.
